The Tale of Spinach Soup

During the winter season we all need a soup that fill us up and make us feel warm and cozy. And this soup does just that with a surprising satisfying taste.

This soup is quick to be made in 15 minutes. Plus its healthy too

2tbsp vegetable oil
1/2 onion diced
2 garlic cloves
6 cubes of frozen spinach
1ltr vegetable stock
Mascarpone cheese for serving
Salt and pepper for serving

Heat a pan on medium heat, add the vegetable oil and saute the onion and garlic for 2 minutes. Add the spinach cubes, and stir for 2 minutes. Add the vegetable stock and let the soup simmer on a low heat  for 5 minutes.
Transfer the soup to a food processor and blitz till the soup is smooth.
Season the soup with salt and pepper
Serve with a teaspoon of mascarpone cheese
